Marinated Onions

*Marinated Onions*
Glass jar
1 red onion
1/2 cup EVOO
1/3 cup red wine vinegar
1 tsp salt
1/2 tsp pepper
1/2 tsp granulated garlic
1/2 tsp dried Basil
1/2 tsp dried oregano


Slice the onion, add to jar, pour in liquids and dried herbs and seasonings and give them a shake. Store in the fridge until onions are a bit softened.


Onions can be stored room temp as long as the onions are completely covered with the pickling liquid to prevent mold.


These will keep for up to 2 weeks in the fridge, but once you start adding them to your food, it’s unlikely they’ll last that long!


The pickling liquid is delicious drizzled over a salad, mixed into tuna, topped over scrambled eggs, or a finishing sauce for grilled chicken or pork. Any remaining marinade, use to make a dressing however the liquid can’t be used for another batch of onions, you’ll need a fresh mixture.


(Measurements will vary depending on the size of your onion, but this is impossible to mess up, get creative with your seasonings and choice of vinegars!)
