Whole Roasted Chicken
Roasted chicken!
Spatchcock the back so the bird lies flat.
Marinate for 2 days in herbs, garlic and citrus.
Roast @375° breast side down and flip 1/2 way through cooking time.
Baste for extra juice, flavor, and crispiness!
Cook remaining time @400° until bird comes to temp. ~ 1-1.5 hours depending on the size of your chicken.
